Blueberry Filled Coffee cake

Ingredients

1 1/2 cups all purpose flour

2 tsp baking powder

3/4 cup granulated sugar

1/3 cup vegetable oil

1 egg, slightly beaten

1/2 cup orange juice

1 tsp vanilla extract

1 cup fresh blueberries

 

Cinnamon Topping

3/4 cup packed brown sugar (I prefer dark but light is fine)

3 Tblsp all purpose flour

3 tsp. ground cinnamon

3 Tblsp vegetable oil

Directions

1. Preheat oven to 375'F.  Coat an 8x8x2 inch baking pan with non stick cooking spray.  In a small bowl stir together flour and baking powder; set aside.  In a medium bowl, using a wooden spoon beat together sugar, oil, and egg till combined. Stir in OJ and vanilla till combined.  Stir in flour mixture.

2.  For cinnamon topping, in a small bowl stir together brown sugar, flour and cinnamon. Add oil, stir until mixture is crumbly, set aside.

3.  Spread half the batter into the baking pan. Sprinkle with half the blueberries and half the cinnamon topping.  repeat layers.

4.  Bake 35-45 minutes or until a wooden toothpick inserted near the center comes out clean.  Let cook on a wire rack.  Serve slightly warm or at room temperature.
