Makes 10-12 Servings
1 (5 pound) bag of red potatoes cut into 1 inch pieces
2 (5.2 oz) packages of Garlic and Herb Boursin Cheese
1/2 cup butter
2 1/2 tsp salt
1 tsp dried tarragon
Place potatoes in a large pot and fill water till potatoes are covered. Place a cover on the pot and bring to a boil on medium to high heat, then reduce heat and simmer for 10 minutes or until potatoes are tender. Drain well. Add Boursin cheese, butter, salt, and tarragon. Mash potatoes with a masher until cheese and butter are melted. Serve immediately.
