I love Butter Pecan Ice Cream, and if you asked me, a scoop on top of a slice of this, or in between 2 like a sandwich.. good heaven.. (If Katrina is reading this, I will be back in the gym on Monday!)
Easy Bread!
Makes 1 8x3x5 Loaf pan or 2 small ones (5x2.5x2) like I did in the photo. Loaf pans vary in size slightly, so do not worry, just get as close as you can. If you do not have a loaf, use a muffin pan!
2 1/4 cups flour
1 Tbs Baking Powder
1 tsp Salt
1 cup Sugar
1 cup chopped Pecans
1 egg
1/2 cup (1 stick) butter, melted
1 tsp butter extract
1 cup buttermilk (** see note)
1/2 cup Powdered Sugar
1 Tbs butter, melted
2 tsp milk
1/4 cup chopped pecans
Blend the sugar, butter and milk together. Follow as directed below. (Drizzle on top of warm bread and then sprinkle with chopped pecans).
Heat oven to 350'F and grease your loaf pan with butter. (I spray mine with nonstick spray like Pam-butter flavor).
In a large bowl whisk together flour, baking powder, salt, sugar, pecans and set aside.
In another bowl, whisk together egg, butter, butter extract, and buttermilk. Slowly add the flour mixture to the egg mixture and combine well with a spoon until well mixed. Pour into prepared pans and bake for about 50 minutes until golden brown and it tests done in the center with a tooth pick. (When a tooth pick is dipped into the center of the bread, it will come out clean when done). Remove from oven and remove bread from pan and set it on a wire rack that is placed on top of a cutting board. Set bread right side up, and while still warm, drizzle the glaze on top of the bread and then sprinkle with the chopped pecans. I drizzled a little extra on top of the nuts to hold them on good!
Note: Not everyone has buttermilk in the house (including me!) What is buttermilk? It is the liquid removed during the butter making process and is low in fat but not sweet. it actually has a twangy or sour taste.
You can make an easy substitute a few ways:
1. Add a tablespoon of either vinegar of lemon juice to a cup of milk.
2. Use the same amount of plain yogurt that you would need in buttermilk. Do not use fruit yogurt!
3. 1 3/4 tsp crème of tarter mixed into a cup of regular milk! (this is what I use, since I rarely have yogurt in the house!)
