My Favorite Things

Pumpkin Chocolate Chip Loaf

This was so yummy and made the house smell so good I could not wait to eat it!  I used melted chocolate to drizzle over the top of one loaf, and the other, I made the Glaze from the Butter Pecan bread and drizzled that on top..  (just the glaze no nuts)  Or you can use a simple confectioners sugar glaze like I use in the iced cookie recipe if you like a little sugar coating. You can leave it plain, as the flavor of the pumpkin and the chocolate is simply marvelous.  You gotta' love pumpkin!

Ingredients

3-1/2 cups Flour

2 tsp Baking Soda

2 tsp Cinnamon

1 tsp fresh grated nutmeg (pre-ground is fine)

1/2 tsp Ginger

1/2 tsp ground Cloves

1 tsp Salt

1 cup butter, softened

2 cups sugar

2 eggs

1-1/2 cups pure pumpkin, canned

1-1/2 cups mini chocolate chips

1 cup walnuts, chopped

Directions

Combine flour, baking soda and spices in a large bowl and set aside.

Cream butter and sugar together for 2 minutes in the mixer.  Beat in one egg at a time and stir well after each one.

Add the flour mixture to the butter alternating with the canned pumpkin. When combined, remove from mixer and with a wooden spoon stir in the chocolate chips and the nuts.

Pour into 2 greased and floured (I use Pam baking spray that has flour in it).  Bake in a preheated over at 350'F for 75 minutes.  Test after an hour and cook longer if still wet inside.
